Avocado? A little bit of green, fluffy heaven.

If you had asked me what I thought of avocado 5 years ago, I would have not been impressed.  But, now.  I love avocado.  I want to eat it all the time.

My favorite thing to do, is cut it open, chop it up in a bowl, sprinkle on a little salt and squeeze on a little lime and add a handful of fresh chopped cilantro.  I like it chunky!  Delicious, fresh and healthy guacamole.  If I really want to be healthy, I will add tomato.   I serve it with chips and I’ve got a delicious, and tasty game day snack.  We always lick the bowl clean!

In fact, recently a coworker and I had a “guac-off”.  Mine was the winner, hands down (even with a lack of garlic or onion).

If you walk around downtown Atlanta, you will see a variety of sandwich shops on the streets.  MY favorite sandwich creation (thanks to my sister) is the veggie sandwich.  Toast two slices of wheat bread, add a couple slices of tomato, fresh cucumber (the little pickling kind), lettuce, salt and pepper and a couple slices of avocado.  To jazz it up even more, add some left-over grilled chicken.

Did you know that avocados have only 50 calories per ounce (around three slices), and they are sodium and cholesterol free? With nearly 20 different types of vitamins, minerals, and phyto-nutrients in a one ounce serving, avocados make a healthy ingredient in any dish.  In fact, it was one of the first foods for our girls!

  5. I have a good guac recipe. 3 avacados, 1 deal of green onions, chopped up, 2 tomatoes & a thing of wishbone salad dressing. De-lish!
