Quick and Easy Taco Soup
Taco soup is a big hit in our house. All of the girls like it, and they like the freedom to make it their own way. Some of us add chips and crunch them up, others make it more of a dip. Others of us like adding cheese and Stonyfield Farms plain yogurt in place of sour cream. It’s like taco night with a twist.
Quick and Easy Taco Soup
Our 7 year old has become quite the chef (she loves making this easy chili) and offered to make our taco soup this week. She even checked the pantry and realized we were out of our homemade taco seasoning (seriously, never use a package again), so she offered to mix up a batch of that first. I think I’ll keep her, this 7 year old!
It’s another super easy recipe. We use cans, but you could easily use frozen veggies, too. And, yes, I acknowledge that veggies is loosely used here. You need ground beef (or turkey or even chicken), one can each of green beans, corn, kidney beans, hominy and diced tomatoes with green chiles, as well as the homemade taco seasoning. This time, I threw in a little quinoa to mix things up, but it’s totally not necessary.
She took care of it, start to finish now that’s she’s able to open the cans, I’m not even needed except to turn the stove on (because she can’t reach the knobs).
As I mentioned, you can serve it with tortilla chips, cheese and plain yogurt or like this last time, we added cilantro and avocado slices, too. Mostly because I like an excuse to eat avocado.
I used to worry that my kids couldn’t handle the heat and made two separate batches, but they always finished their batch and wanted more, so they got ours. They actually like it with a touch of spice, but if you don’t, you can always use diced tomatoes in place of the tomatoes with chiles.
But, as you can see, B is loves her “soupie” just the way it is…and has her juice in her OXO Tot Twist Cup nearby just in case she hits a “spicy bite!” She’s been using our utensils for a while (to be like her sisters) but when I pulled out the Fork & Spoon Set, she yelled out that it was hers…and so it was.
When we have soup, I prefer to still have a bib on her (she often fights them), but the Roll-Up Bib was well-received by both her and us. She was all set for her Taco Soup feast. And, it was a hungry night, because she had THREE SERVINGS!
Quick and Easy Taco Soup
Ingredients
- 1 lb ground beef turkey or chicken
- 3 T Homemade Taco Seasoning
- 1 can green beans
- 1 can corn
- 1 can hominy
- 1 can kidney beans drained and rinsed
- 1 can diced tomatoes + chiles
- quinoa
- avocado cheese, plain yogurt, tortilla chips cilantro as garnish
Instructions
- Brown the meat until cooked.
- Add 3T homemade taco seasoning and all cans with liquids (except kidney bean liquid)
- Mix, and heat to boil.
- Allow to simmer for at least 30 minutes, but preferably longer for seasoning to settle.
- If adding quinoa, add 1/3-1/2 cup and double the amount of water (and allow to simmer closer to an hour)
- Serve with avocado, cheese, plain yogurt, tortilla chips cilantro as garnish.

Of course she needs HER own utensils. 🙂 This soup looks awesome. Taco Soup is a big hit in our house because you can make it how you like it. I like to use tortilla chips to scoop up all the goodies. And Stonyfield plain Greek is the perfect topper!
Fourth child problems..I don’t think she was ever offered her OWN utensils before!
