Cranberry French Toast Casserole with Orange Glaze Recipe

Cranberry French Toast Casserole with an Orange Glaze might be our family’s new way to enjoy french toast casserole. This cranberry french toast casserole with orange glaze can be made a day ahead, or prepared just an hour before baking making it perfect for busy holiday breakfasts or brunches.

We’ve done a more traditional french toast casserole with all of the sweetness of syrup and classic flavors, but we wanted to mix things up this time. Starting with a Cranberry-Pecan Sourdough Loaf from Wildgrain, a zesty cranberry french toast casserole with an orange glaze is the perfect choice for new and different.

What you’ll need for Cranberry French Toast Casserole with Orange Glaze

Bread We used the Cranberry-Pecan Sourdough Loaf from Wildgrain. With nutrients, fiber-rich bran, proteins, probiotics and vitamin-rich germs, this a tasty and crusty bread perfect for absorbing the custard.

Large Eggs Go big or go home and get all of that yolky goodness for your french toast casserole.

Milk Many recipes use whipping cream which you could use here, but we went with whole milk for some richness, but a step down from whipping cream.

Fresh or Frozen Cranberries Around fall there is an abundance of cranberries. Every time I buy them fresh for cranberry sauce, we have extra that we freeze. You can use those fresh cranberries or frozen from fresh. The fresh cranberries in addition to the cranberries in the bread make a nice tart pop so it’s not a super sweet and sugary dish.

Light Brown Sugar, Vanilla Extract, Ground Cinnamon and Nutmeg for rounding out the flavor.

What you’ll need for the orange glaze

Orange really compliments cranberry so well. So instead of a traditional maple syrup on this cranberry french toast casserole, we went with an orange glaze drizzled over the top. I can’t imagine this with a syrup as the glaze really is chef’s kiss, delicious.

You’ll need butter, milk, confectioners sugar (powdered sugar) and either orange juice or orange extract.

How to make cranberry french toast casserole

  1. Coat an 8″ x 11″ casserole dish with cooking spray.
  2. Cut the Cranberry-Pecan Sourdough Loaf from Wildgrain into 1.5″ pieces and put them into the coated casserole dish.
  3. Top the cut up bread with 1 cup of fresh cranberries.
  4. In a mixing bowl, whisk together milk, eggs, vanilla, cinnamon, brown sugar, and nutmeg. Mix until little bubbles have formed.
  5. Pour the mixture over the bread.
  6. Toss lightly and squeeze the mixture into the bread. Make sure to mix the cranberries into mixture and that they aren’t all on the bottom.
  7. Cover and refrigerate for at least an hour (or overnight).
  8. Bake uncovered for 45 minutes at 350F. (If removing straight from the refrigerator, place the cold dish in a cold oven and allow it to come to temperature together so you don’t crack your dish).

Remove from oven with it’s brown and the mixture is cooked completely.

How to make the Orange Glaze

While the cranberry french toast casserole is cooling, make the orange glaze.

  1. Melt 1 Tablespoon butter.
  2. To that add confectioners sugar, milk, vanilla extract and orange juice or orange extra.
  3. Mix together and drizzle over warm cranberry french toast casserole.

A zesty twist on a classic; French Toast casserole but using cranberry-pecan sourdough and an orange glaze.

Ingredients

  • 1 loaf cranberry-pecan sourdough bread
  • 1 cup fresh cranberries
  • 4 large eggs
  • 2 cups whole milk
  • 1/4 cup light brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • 1 cup confectioners sugar
  • 1 Tablespoon butter
  • 1 1/2 teaspoon vanilla
  • 1 teaspoon orange extract
  • 2 Tablespoons milk

Orange Glaze

Notes

You can substitute a traditional sourdough or any loaf bread.

Either use 1 teaspoon orange extract, or half the amount of milk and use the other half as orange juice.

    The orange glaze on this sounds so good. We normally just use maple syrup but I would like to try something different
