Strawberry Pie

Every time I say Strawberry Pie, I start singing the song Strawberry Wine.  I don’t know why, it just comes to mind.

After picking these delicious strawberries, I decided I needed to make a strawberry pie.

When I got married, my aunt gave me her recipe.  I asked who gave it to her, and she said it was from her grandma, so I have no idea who to give credit to.

I didn’t take a picture of all of the ingredients, but in addition to the strawberries you will need some cornstarch, sugar and lemon or lime juice as well as a pie crust.

First, you have to pick out 2 cups of the best, firmest strawberries you picked.  Clean them and allow them to dry very well.

Drying the Strawberries.

While the strawberries are drying, prepare your crust.  (I could say I homemade this, but that would be a fib.  I’ve never made homemade crust.  I can’t tell a difference, so I don’t go through the trouble.)  So, prepare the crust as you see fit and bake it according to the corresponding directions.  Once it’s cooked, remove it from the oven and allow it to cool. (Lately my preference is to use a graham cracker crust! Give it a try)

Then, you take 2 cups of the riper and softer strawberries, along with 1 cup of sugar and 3 1/2 Tablespoons of corn starch and blend them up.

Blending the filling.

Pour the blended mixture into a pot and bring it to a boil while stirring constantly.  After the mixture has boiled, remove it from the heat and add 1-3 Tablespoons of lemon or lime juice to taste.

Cooking the filling.

Place the pot in a bowl full of ice and mix to cool it down.  The mixture must be completely cooled before you can use it.

While the mixture is cooling (and as long as the pie crust has cooled) place the “best” strawberries in the pie shell.

Pour the cooled mixture over the berries.

Place it in the fridge to allow it to set and them enjoy!

Here’s the completed pie using a prepared graham cracker crust…I highly recommend it.

Ingredients

  • 2 c firm or “best” strawberries
  • 2 c ripe strawberries
  • 3 1/2 T cornstarch
  • 1 c sugar
  • 1-3 T lemon/lime juice (I prefer lime!)
  • 1 prepared pie crust (try it with graham cracker)
