Easy Buffalo Chicken Taquitos
If you’ve been around a while, you know that I love buffalo flavoring and hot sauce, especially on my chicken (and if I’m honest, on my broccoli and potatoes, too), like bacon buffalo chicken dip and individual buffalo chicken and vegetable crudités cups.
This time, I set out to make something yummy, buffalo, with chicken, a little crunch, and I came up with this deliciousness.
Easy Buffalo Chicken Taquitos
I had boiled some boneless-skinless chicken breast for a previous meal and set some aside. Once it was cool, I put the chicken breast in my food processor and pulsed it until it was very small.
Taking 2 cups of the chopped chicken breast, I added one cup of hot sauce. You can adjust as you see fit. You want it to have flavor.
Preheat a pan on the stove with cooking oil of your choice. I used 2T of canola oil
I placed 1.5 Tablespoons of the flavored chicken in a corn tortilla and rolled it up tight and placed it seam-side down to start in the oil cooking and rotating until browned on all sides.
Once browned, I removed them from the oil, and placed them on a paper towel to cool (and absorb any extra oil).
Okay, I admit, I ate some nice and hot right then and there and yum! They were a hit. They were also a hit with the kids and the husband.
For the family and the big game in a few weeks, I will serve these with Naturally Fresh’s® Classic Ranch made with their own buttermilk found in the refrigerated section at the grocery store.

Easy Buffalo Chicken Taquitos
Ingredients
- 2 c boiled chicken
- 1 c hot sauce, like Frank's
- 2 T cooking oil
- corn tortillas
- dressing for dipping
Instructions

- remove from heat and allow to cool and dry on a paper towel
- serve with dressing

So glad I bumped into you on Instagram because my daughter would LOVE these! Love the idea of frying up the corn tortillas with that filling – I’ve never made taquitos before and am thinking these need to happen soon!
Oh, and they are so easy, too. Of course, if your daughter doesn’t like spicy, you can just use the chicken, too!
Honestly, I wanted to bake them, but my tortillas kept ripping…I’m going to try again maybe with homemade tortillas.

Frank’s is really our go to…a good replacement would be a buffalo type sauce.
