Individual Buffalo Chicken and Vegetable Crudités Cups

My girls get off the bus at 2:20. Yes. 2:20. That’s insanely early right? Their day actually starts around 6am. It’s very different than when I was in elementary school.

They eat lunch and have a small snack at school and walk in the door looking for food. I’m convinced they could pretty much eat all day long and still be hungry. They do, however, need to work on drinking more water, but they are most definitely a work in progress.

Most days, we encourage fruits and vegetables, but they often need protein to help them make it to dinner time. So other times, I like to make something for them to mix things up.

I recently learned that Farm Rich products are now sold in select Target stores starting in August and will feature Farm Rich Mozzarella Sticks (America’s #1 selling cheese stick), Mozzarella Bites, Bone-in Buffalo Chicken Wings and Boneless BBQ Chicken Bites. I knew I wanted to come up with a snack for the girls! They really like buffalo wings, so I came up with some individual buffalo chicken and vegetable crudités cups. (This would also work well with the Boneless BBQ Chicken Bites if spicy isn’t your thing).

These are great for individual portions. There is no fighting over who gets more. No more double dipping here! And, you could easily swap out dipping sauces and control how much they get!

I put about 1T of ranch dressing in the bottom of the cups (you could use bleu cheese or whatever other dip you would like) and cut up some carrot and celery sticks while the Bone-in Buffalo Chicken Wings and Boneless Buffalo Chicken Bites were cooking.

The girls were so excited when they saw the little individual cups for them, that they dove right in.

Mr. Serious enjoyed them, too. They will also make great after work snacks for him. Or more realistically, great snacks for a football watching party or tailgating.
