Savory Gluten-Free Baked Chicken Nuggets
Chicken nuggets are a BIG hit in our house. But, it’s been a struggle for me to find some that we can all enjoy that are still homemade and I know what is in them. Because gluten-free baked chicken nuggets are kind of dreamy when they are done right. You want the right amount of flavor and the right amount of crunch.
The Chicken
When it comes to feeding six people, it can take a lot of food, so when we get our chicken, we make sure to order it from Zaycon Foods. They feature fresh, never frozen, no hormones or additives added meats (chicken, turkey, pork, beef, fish) available for delivery! You can check on their events page to see if they have any events near your house. It’s tricky, they call their deliveries “events”, so pay attention to that! It comes in a giant 40 pound box, so we do have to figure out a way to store it all.

In fact, I usually will precut some of it, so when we are ready to thaw it, the nuggets are almost already made, they just need the breading.

When we were ready to have nuggets, I pulled the chicken out of the freezer the night before and allowed it to thaw. Then we were in business.
The ingredients
We like our gluten-free baked nuggets to be savory. So, I picked up some Italian dressing, and some gluten-free Italian Seasoning croutons (you could use a gluten-free corn flake cereal as another option) as well as had some gluten free flour on hand.
The Steps
Before starting with the croutons, I put them into my food processor to make them into more of a batter, or like a panko consistency (which you could also use if you don’t need your nuggets to be gluten-free).
Once they were pulverized, we set up our assembly line to make our gluten-free baked chicken nuggets.
I (okay, really, the 11 year old) took the cut up pieces of chicken, rolled it in the gluten free flour, then the Italian dressing, and then rolled it in the seasoned croutons.
Then they went onto the pan for cooking.
The chicken nuggets get cooked at 350 for about 25 minutes until they are nice and crispy and brown.

Delicious, tasty and easy. And, everybody in the family loved them. We usually have enough for leftovers, but that wasn’t the case here. All nuggets were devoured!

Gluten-Free Baked Chicken Nuggets
Ingredients
- 3 chicken breasts, cut into bite-sized pieces
- 1 cup Italian Dressing
- 1 cup gluten-free flour
- 1 package gluten-free croutons, processed
Instructions
- put croutons into food processor to make them into more of a batter, or like a panko consistency, place in bowl
- fill another bowl with the gluten-free flour
- fill a third bowl with Italian dressing
- take cut up pieces of chicken, roll in gluten free flour, then Italian dressing, and then rolled in seasoned croutons and place them on a greased pan
- Cook nuggets at 350 for about 25 minutes until they are nice and crispy and brown.
