Cali’flour Pizza Crust & Penne
We served our sauce on top of Cauliflower & Yellow Lentil Penne pasta and prepared the Cali’flour Pizza Crust, a Low Carb Cauliflower Pizza, as breadsticks for soaking up additional sauce.
The pasta was one of the best gluten free pastas I’ve ever had and it only contains two 2 ingredients and is a high protein pasta. To add a little more to the pasta because I found a good deal on it, I roasted a spaghetti squash with olive oil and salt and pepper.
First we placed the noodles on the plate, then using a fork, we shredded the spaghetti squash and put it on top of the noodles. Then it was time for the sauce.
You’ll notice the Original Italian Cauliflower Pizza Crust was cooked and then cut into strips to make a nice breadstick for all of us to enjoy. With 4 simple ingredients (fresh cauliflower, mozzarella cheese, eggs and seasoning) and 180 calories for the entire crust, everybody got a few pieces.

Garden Lites Muffins
With dinner, we served Garden Lites Superfood Veggie Cakes. They gave some more color and veggie packed goodness to our dinner. The veggies cakes are full of nutrient-rich super food veggies like kale and cauliflower, are gluten-free and less than 100 calories! Not only were they a great side dish, but I also have eaten them as snacks.
After dinner, it was time for some dessert and coffee. We enjoyed the Garden Lites Blueberry Oat Muffin. Surprisingly, the first ingredient in Garden Lites Blueberry Muffins is zucchini!
Both muffins can easily be heated in the microwave.
