Panko-crusted savory baked salmon
Salmon is such a great nutrient dense fish. I really enjoy eating it at restaurants, but struggle cooking it, until this panko-crusted savory baked salmon.
When most of the family will eat it, I consider it a win, too.

Making the Panko-crusted savory baked salmon
This is an incredibly easy and quick meal to make. Our 12 year old has made it for us with great ease. We are big fans of great taste and easy to make.
(This recipe is naturally dairy-free, but while we used gluten-free Panko, our Ssam Sauce from HEB has a small amount of wheat from the soy sauce).
Also, at one point we had a recipe card for this from HEB, but couldn’t find it, so we winged the ratios and modified it slightly.
The Ssam sauce and sesame oil are really what pull all of the flavors together. The avocado mayonnaise gives it a slight creamy texture without a mayonnaise taste. (Much like this gluten-free chicken nuggets, you don’t taste the mayo.)
Make sure to line your baking sheet with foil or parchment paper as the sauces mixed together and baked on tend to be hard to clean. You could also spray your sheet with cooking spray.
You’ll sprinkle the salmon with some seasoning. We used garlic pepper.
Then, top it with a mixture of avocado mayonnaise (1:1 ratio) and place it into the oven. Maybe sure to cover all of the edgest to really seal in the moisture.
While it’s cooking, you’ll want to mix up the panko bread crumbs and sesame oil.
Once the salmon is cooked or almost fully cooked, you’ll take it out of the oven and cover the salmon with the panko breadcrumb mixture. Don’t skimp here. Use all of it and cover the entire fillet.
Pop the salmon back into the oven for a few minutes until the topping is crispy. Serve and eat immediately. We like ours with rice and air-fried asparagus.
